It is a hot (for the UK) Sunday, a day for moving slowly and thinking deeply.
I have had my own brewery for 8 years now, and have been making bread once or twice a week for 18 months.
So it was time to explore fermentation in other areas.
In the last fortnight, I have made yoghurt (several times), kimchi and pickled ginger.
Kimchi in Seoul many years ago was a revelation, the combination of flavours very much to my taste.
So this quote felt right for today – it is a day of rest when the only new ferment will be my thoughts!
